Coffee Cake in a Cup

Have you ever had a craving for just a piece of chocolate cake but didn’t want to make a whole cake that’s not only hard to stay away from but also dirties up a lot of dishes?

I discovered the perfect solution to such dilemma from our former Extension 4-H Youth Educator. She demonstrated to our club how to give a demonstration and used this recipe for her demo. Naturally, I had to write down the recipe because the club got to sample her cake afterwards and it was better than I expected.

It’s easy to make at work, home, the dorm for college students, and makes the perfect size. It’s enough to share with someone or to eat half and save half for later.

The most important tip is making sure you use a large microwavable mug. You mix all the ingredients in the cup with a fork.

I didn’t follow the instructions and just threw everything in together, which results in the same outcome.

Here’s all you need:

4 T. flour

4 T. sugar

2 T. unsweetened cocoa

Mix in a big coffee mug. Add the following to dry ingredients (or you can do like I did)

1 egg

3 T. milk

3 T. oil

3 T. chocolate chips (regular or mini kind)

1 T. chopped walnuts, optional

Microwave on high for three minutes. Amazingly, that is all  it takes to cook it. It doesn’t boil over and is done in the center.

No frosting is needed, just scoop out with a spoon!
