More Cookie Dough Recipes

Chunky Mocha Cookies

1 c. butter-flavored shortening

¾ c. sugar

½ c. packed brown sugar

2 eggs

2 T. milk

1 T. instant coffee granules

1 t. vanilla extract

2 1/3 c. all purpose flour

2 T. baking cocoa

1 t. baking soda

½ t. salt

1 c. chopped pecans

1 c. semi-sweet chocolate chips

¾ c. raisings

¾ c. coconut

(last four ingredients are optional, of course)

In mixing bowl, cream shortening and sugars. Beat in eggs, milk, instant coffee granules, and vanilla. Combine flour, cocoa, baking soda, and salt; add to creamed mixture and mix well. Stir in pecans, chips, raisins, and coconut. Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake 375 degrees 10-12 minutes. Makes about 6 dozen.

Chocolate Nut Cookies

1 c. butter or margarine, softened

¾ c. packed brown sugar

½ c. sugar

1 egg

1 t. almond extract

2 c. all-purpose flour

¼ c. baking cocoa

1 t. baking soda

½ t. salt

1 c. vanilla baking chips

1 c. chopped almonds

In a mixing bowl, cream butter and sugars. Add egg and extract; mix well. Combine flour, cocoa, soda and salt; add to creamed mixture and mix well. Stir in chips and nuts. Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 375 degrees for 7-9 minutes. Cool for one minute before moving to wire racks. Makes about 5 dozen cookies.

Peanut Butter Cookies

1 c. shortening

1 c. peanut butter

1 c. sugar

1 c. packed brown sugar

3 eggs

3 c. all purpose flour

2 t. baking soda

¼ t. salt

In a mixing bowl, cream shortening, sugars (By now I’m sure you already know this and these recipes’ instructions are starting to get redundant), and peanut butter. Add eggs one at a time, beating well after each addition. Combine flour, baking soda, and salt. Gradually add to creamed mixture. Roll into 1 ½ inch balls and place 3 inches apart. Flatten with fork in waffle pattern. Bake at 375 degrees for 10-15 minutes or until bottoms are lightly browned. Move to wire racks. Makes about 4 dozen.

All the recipes I’ve shared make excellent cookie dough. They’re not bad if you decide to make cookies out of ’em too.
